Leftover mashed potatoes

I have found a fun way to re-purpose leftover mashed potatoes in case anyone is interested!
Warm the leftover mash (adding milk if it needs to be revived)
Divide into individual serving dishes. Dig out a hole in the center and crack an egg into each.
Top with salt, pepper, and parmesan cheese.
Bake at 450 for 15 min or until the egg is cooked to your liking. ( I think we did about 20 min)
